Gluten Free Fried Chicken.











GLUTEN FREE FRIED CHICKEN
MAKES 4 LARGE PIECES
4 BONLESS SKINLESS CHICKEN BRESTS
1 EGG
¼ C MILK
1/3  ALL PURPOSE GLUTEN FREE FLOUR
2 TBSP CORN STARCH
 2 TBSP ROMANO/ PARMESEAN CHEESE
¼ TSP SALT
¼ TSP PEPPER
1 TSP SEASON SALT
1/3 C OIL * (ENOUGH TO COVER THE BOTTOM OF THE PAN AND ABOUT HALF THE CHICKEN)

Heat oil over a medium heat.
In one bowl whisk the egg, milk and pepper.
In the second bowl add Romano cheese, salt, season salt, flour and corn starch.
Dredge the chicken in the flour bowl then the egg mix then back in the flour.
Cook until golden brown on each side and white in the middle.

This was our yummy dinner!!

Time to wave the green flag and strap on my back pack. School starts this week!
Guess who will be "loafing it" (GGG's words) THIS GIRL! As I type I am trying out my study playlist. I already nixed one song. The tempo and beats were so vastly different from what I need. I need upbeat but not distracting. I find the Beatles a good start.

Count down to school

In less than two weeks I will be "back in the saddle" so to speak. I am really looking forward to the next three semesters.
I hope that:
1. I get good grades.
     Good grades are not optional in the CSD world. A 4.0 is common in my major. Hopefully over the next three semesters I can raise my current GPA which is SAD to make it happy and also have a killer resume with tons of outstanding tasks.  Fingers crossed readers.
2. I stay sane.
      Staying sane is completely optional and probably wont happen. I have been stressing about these next semesters since I started this major. It is very common for students to stress sometimes, my mantra for the next three semesters will be keep it together and trust God.
3. I graduate with my bachelors degree.
I think that they let you graduate even if you don't have stellar grades you just have no chance of getting in to graduate school EVER. Good luck to me.
4. I get in to grad school.
There is no point in getting a CSD degree with out a Masters degree because you can't practice with out certification. So good luck to me again.

I will be trying to keep this updated it gives me a sense of accomplishment to write from time to time. I also have a delicious recipe to post!

Summer update and hopefully a new beginning.

Well.
It has been an eventful six months since I have written... Looking back I should have written more about GG and her antics. I think that would have been amusing. However she kept me on my toes and I always forget that I like to blog and that it is a good way to get some things safely off my chest.

So in a very small nutshell we moved in with GG and she wasn't feeling well for about three months. Mid March however things took a good turn for her health and she was feeling fit as a fiddle, and in turn started stirring up trouble/lies/mischief in an attempt to get my husband and I out of her house. Her antics worked and we have since moved out. Once we were out of her house however the cycle started again. She didn't take good care of her self and ended up going to the ER multiple times. I am glad to say that she has a new home now. The transition from place to place was very hard on her but she has bloomed and I can gladly say she doing really really well.

I have had a very hard time dealing with the emotion and psychology behind someone who is supposed to love you treating you the way she treated me. I guess everything happens for a reason. Praise be to God because GG and I are in a much better place. I still try to visit her about once a week and on my birthday I got to take her cupcakes.

Its the small things in life that make the biggest differences. I am happier now than I have been in months and am hoping to get the chance to share some of the best news with anyone who reads this.
